Garlic Butter Chicken


  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/4 cup reduced-fat chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon juice


  1. Season and Cook Chicken:
    • Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and set aside.
  2. Saute Garlic:
    • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  3. Deglaze with Broth:
    • Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
  4. Add Butter and Finish:
    • Reduce heat to low, add unsalted butter to the skillet, and let it melt. Stir to combine. Return the cooked chicken to the skillet and coat with the garlic butter sauce. Cook for an additional 2-3 minutes to heat through.
  5. Finish and Serve:
    • Stir in chopped fresh parsley and lemon juice. Adjust seasoning if needed. Serve the chicken with the garlic butter sauce spooned over the top.
