Holiday Cranberry Vanilla Mini Trifles

This delicious Weight holiday dessert is perfect for your winter parties and holiday get-togethers. Your guests will be wowed by the beautiful layers, especially when served in a wine glass or other clear dish.

  • 1 angel food cake prepared according to box directions
  • 2 boxes sugar-free vanilla pudding 3.4 oz each
  • 3 cups skim milk
  • 24 oz fresh cranberries plus ½ cup for topping
  • 1 ½ cups water
  • 1/2 cup Splenda Or sweetener of your choice, but adapt W-W points accordingly.
  • 2 cups fat-free or light Cool Whip


  • Cake Layer: Prepare angel food cake according to box directions. Allow to cool completely. Tear into small pieces.
  • Cranberry Layer (prepare while the cake is baking): In a saucepan, combine 24 oz of cranberries, water, and Splenda.
  • Bring to a boil and reduce heat. Allow to cook on low for 10 minutes. Cool completely.
  • Pudding Layer (prepare while cranberries are cooling): Combine pudding powder and milk in a medium bowl. Whisk until the pudding thickens.
  • Assembly: Start with a layer of angel food cake pieces. Top with a layer of pudding and then a layer of cranberries. Repeat.
  • Top with a layer of cool whip and fresh cranberries.
  • Serve chilled.
