Home Made Potato Soup

This simple W-W potato soup is easy to make and perfect for weeknight dinners. It can be done and on the table in 30 minutes or less!

Ingredients

  • 4 cups chicken broth fat free
  • 3 lbs potatoes (peeled and cubed )
  • 1/4 cup onion (minced )
  • 1 clove garlic (minced)
  • 1/2 tsp seasoned salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper
  • 8 oz cream cheese (chunked)
 Low fat

Instructions

  1. Combine broth, potatoes, onion, and spices in large stock pot
  2. Boil on medium heat until potatoes are tender
  3. Smash a few of the potatoes to release their starch for thickening
  4. Reduce heat to low
  5. Add cream cheese
  6. Stir frequently until cheese is melted

Notes

8 W-W points per serving of 1 cup soup.
