INGREDIENTS

  • 1 tbsp baking powder
  • 2 cups all-purpose flour
  • ½ cup sugar
  • ½ tsp salt
  • ½ tsp cumin
  • fresh ground black pepper to taste
  • 2 eggs beaten
  • ¼ cup butter melted
  • 1 cup milk
  •  cups fresh corn kernels cut from cob
  • 1 cup cheddar cheese finely shredded
  • 2 cups zucchini grated
  • oil for frying

INSTRUCTIONS

  • Using a large mixing bowl, add baking powder, flour, sugar, salt, cumin, and pepper. Stir to mix.
  • Using a small mixing bowl, add eggs. Whisk in butter and milk.
  • Add wet ingredients to the dry ingredients by slowly whisking in.
  • Add in the corn, cheese, and zucchini. Stir to mix well.
  • Add oil to cast iron skillet, and heat over medium/high heat.
  • Drop mix in hot skillet by tablespoonfuls. Fry until fritters are browned and crisped, carefully turn using tongs and brown the other side.
  • Carefully remove from the skillet and transfer to a paper towel to drain oil.
  • Serve
