INGREDIENTS
- 1 tbsp baking powder
- 2 cups all-purpose flour
- ½ cup sugar
- ½ tsp salt
- ½ tsp cumin
- fresh ground black pepper to taste
- 2 eggs beaten
- ¼ cup butter melted
- 1 cup milk
- 1½ cups fresh corn kernels cut from cob
- 1 cup cheddar cheese finely shredded
- 2 cups zucchini grated
- oil for frying
INSTRUCTIONS

Using a large mixing bowl, add baking powder, flour, sugar, salt, cumin, and pepper. Stir to mix.

Using a small mixing bowl, add eggs. Whisk in butter and milk.

Add wet ingredients to the dry ingredients by slowly whisking in.

Add in the corn, cheese, and zucchini. Stir to mix well.

Add oil to cast iron skillet, and heat over medium/high heat.

Drop mix in hot skillet by tablespoonfuls. Fry until fritters are browned and crisped, carefully turn using tongs and brown the other side.

Carefully remove from the skillet and transfer to a paper towel to drain oil.
