Ingredients:

  • 2 cups of fresh corn kernels (you can also use canned or frozen corn, just make sure to drain and rinse if using canned)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper (any color you prefer)
  • 1/4 cup chopped fresh cilantro or parsley
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. If using fresh corn, cook the corn kernels in boiling water for about 3-5 minutes until tender. If using canned or frozen corn, ensure it’s thawed or drained properly.
  2. In a large mixing bowl, combine the corn kernels, cherry tomatoes, diced red onion, diced bell pepper, and chopped cilantro or parsley.
  3. In a small bowl, whisk together the fresh lime juice and olive oil to create the dressing. Season with salt and pepper to taste.
  4. Pour the dressing over the salad ingredients and toss gently until everything is evenly coated.
  5. Taste the salad and adjust seasoning if necessary.
  6. Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
