Homemade Apple Scones (2 points) Recipe

  • 1 cup flour
  • 2 tbsp splenda
  • 1 tbsp baking powder
  • 1 pinch table salt
  • 1/2 cup plain fat free greek yogurt
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 (to 3/4) cup microwave gooey apples (see recipe)
  • 1 egg white


  • Preheat oven to 350F. Prepare a baking sheet by putting down parchment paper.
  • Prepare the microwave gooey apples (see recipe). Set aside to cool.
  • In a medium bowl combine the flour, sweetener, baking powder and salt. Mix well. Set aside.
  • In another medium bowl combine the yogurt, egg and vanilla extract. Mix well.
  • Add the wet ingredients to the dry ingredients and mix until combined.
  • Add in the apples and knead a few times to mix them in.
  • Form the dough into a 7″ circle. Cut into 6 triangles.
  • Place the triangles onto the prepared baking sheet.
  • Beat up an egg white and paint each triangle.
  • Bake for 20-25 minutes until each scone is cooked through and golden brown.


Cranberry – substitute the microwave gooey apples with 1/2 cup cranberry sauce (see recipe).

Chai Apple – substitute the microwave gooey apples with chai gooey apples (see recipe).

Strawberry – substitute the microwave gooey apples with 1/2 cup of chopped strawberries.
