With a few simple modifications, we’ve created a delicious and satisfying version that’s lower in calories and SmartPoints, making it perfect for anyone following the  program. Let’s dive into the details of how to make this flavorful dish.

  • 4 boneless, skinless chicken breasts
  • 4 slices lean ham (such as turkey ham)
  • 4 slices reduced-fat Swiss cheese
  • 1/2 cup whole wheat breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly coat a baking dish with cooking spray to prevent sticking.
  2. Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are about 1/4-inch thick. Season both sides of the chicken breasts with salt and pepper to taste.
  3. Assemble the Chicken Cordon Bleu: Lay a slice of ham and a slice of Swiss cheese on top of each chicken breast. Roll up the chicken breasts tightly, securing them with toothpicks if necessary to keep the filling inside.
  4. Prepare the Breadcrumb Mixture: In a shallow dish, combine the whole wheat breadcrumbs, grated Parmesan cheese, dried parsley, garlic powder, onion powder, salt, and pepper. Mix well to combine.
  5. Coat the Chicken: Roll each stuffed chicken breast in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the chicken. Place the coated chicken breasts in the prepared baking dish.
  6. Bake the Chicken: Lightly spray the tops of the chicken breasts with cooking spray to help them brown in the oven. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown and crispy.
  7. Serve: Remove the chicken from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley or a squeeze of lemon juice, if desired. Serve hot and enjoy!
