Ingredients:
- 2 large eggs
- 1/4 cup almond flour
- 1/4 tsp baking powder
- 2 tbsp cocoa powder
- 1 tbsp coconut flour
- 2 tbsp granulated erythritol
- 1/2 tsp vanilla extract
- 2 tbsp unsweetened almond milk
- 2 tbsp heavy cream
- 1/4 cup sugar-free chocolate chips
- 1/4 cup heavy cream
- 1/4 cup sugar-free vanilla pudding mix
Instructions:
- Preheat your mini waffle maker.
- In a mixing bowl, whisk the eggs until frothy.
- Add in the almond flour, baking powder, cocoa powder, coconut flour, erythritol, vanilla extract, almond milk, and heavy cream, and mix until well combined.
- Pour the batter into the mini waffle maker and cook until golden brown and cooked through, about 3-4 minutes.
- While the chaffles are cooking, prepare the chocolate ganache by melting the chocolate chips and heavy cream in a double boiler or in the microwave.
- Once the chaffles are cooked, spread a layer of vanilla pudding mix on top of one chaffle, then place another chaffle on top to make a sandwich.
- Drizzle the chocolate ganache on top of the chaffle sandwich.
- Enjoy!
