Crust Ingredients:

  • 1 1/2 cups almond flour
  • 2 tbsp coconut flour
  • 2 tbsp psyllium husk powder
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 large egg

Topping Ingredients:

  • 1/2 cup sugar-free tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh basil

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and sea salt.
  3. Add the olive oil, water, and egg to the dry ingredients and mix until well combined.
  4. Knead the dough by hand until it becomes smooth and elastic.
  5. Roll the dough out between two sheets of parchment paper to about 1/4 inch thickness.
  6. Transfer the crust to the prepared baking sheet and remove the top sheet of parchment paper.
  7. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden brown.
  8. Remove the crust from the oven and spread the tomato sauce over the top.
  9. Sprinkle the shredded mozzarella cheese, sliced pepperoni, and sliced black olives over the sauce.
  10. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
  11. Top the pizza with chopped fresh basil before serving.
