Crust Ingredients:
- 1 1/2 cups almond flour
- 2 tbsp coconut flour
- 2 tbsp psyllium husk powder
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/4 cup olive oil
- 1/4 cup water
- 1 large egg
Topping Ingredients:
- 1/2 cup sugar-free tomato sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh basil
Instructions:
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and sea salt.
- Add the olive oil, water, and egg to the dry ingredients and mix until well combined.
- Knead the dough by hand until it becomes smooth and elastic.
- Roll the dough out between two sheets of parchment paper to about 1/4 inch thickness.
- Transfer the crust to the prepared baking sheet and remove the top sheet of parchment paper.
- Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden brown.
- Remove the crust from the oven and spread the tomato sauce over the top.
- Sprinkle the shredded mozzarella cheese, sliced pepperoni, and sliced black olives over the sauce.
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
- Top the pizza with chopped fresh basil before serving.
