Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar or a sugar substitute suitable for baking
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated apple (about 1 medium-sized apple)
- 1/2 cup raisins or dried cranberries (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Set aside.
- In another bowl, combine applesauce, melted coconut oil, brown sugar, granulated sugar (or sugar substitute), egg, and vanilla extract. Mix until well combined.
- Add the grated apple to the wet ingredients and stir to combine.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in raisins or dried cranberries and chopped nuts.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown. Keep an eye on them as baking times can vary.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
