Mango Apricot Chutney (2 points)

Ingredients:

  • 1/2 cup firm mango, chopped
  • 2 tbsp cider vinegar
  • 2 tbsp dates, chopped
  • 1/2 tsp fresh ginger, grated
  • 1/2 tsp garam masala
  • 1/2 tsp curry powder
  • 5 tbsp light apricot jam
  • 1 pinch salt

Directions:

  1. In a small saucepan, combine the mango, vinegar, dates, ginger, garam masala and curry powder.
  2. Simmer over low heat until the vinegar cooks off, about 2 minutes, stirring occasionally.
  3. Remove from heat and stir in the apricot jam and salt.
  4. Let cool.
  5. Suggested Serving: Serve with crackers, pappadums or baked pitas.
