1 unbaked 9-inch pie crust (homemade or store-bought)
3 large eggs
¾ cup granulated sugar
½ teaspoon salt
1 teaspoon pure vanilla extract
2½ cups whole milk (room temperature is best)
Ground nutmeg (for sprinkling)

1. Preheat the oven:
Preheat to 350°F (175°C). Place the pie crust in a 9-inch pie pan and crimp the edges. Set it on a baking sheet to catch any spills.
2. Make the custard filling:
In a medium bowl, whisk the eggs until smooth. Add sugar, salt, and vanilla. Slowly whisk in the milk until everything is well combined (don’t over-beat — we want it smooth, not foamy).
3. Fill the crust:
Pour the custard mixture into the unbaked pie crust. Sprinkle the top with a pinch of ground nutmeg.
4. Bake:
Bake for 45–55 minutes, or until the center is just set but still has a slight jiggle. A knife inserted near the center should come out clean. (Don’t overbake — it continues to set as it cools.)
5. Cool:
