Only 2 point Pineapple Soft Serve Ice Cream

4 cups frozen pineapple chunks
1/2 cup unsweetened coconut milk (or any other milk of your choice)
1-2 tablespoons honey or agave syrup (optional, depending on sweetness preference)
1 teaspoon pure vanilla extract

Instructions:

Place the frozen pineapple chunks in a high-powered blender or food processor.

Add the unsweetened coconut milk, honey or agave syrup (if using), and pure vanilla extract.

Blend the mixture until smooth and creamy. You may need to stop and scrape down the sides of the blender or processor a few times to ensure even blending.

Taste the mixture and adjust the sweetness if necessary, adding more honey or agave syrup if desired.

Continue blending until you achieve a soft-serve consistency.

Serve immediately in bowls or cones.

Optionally, you can freeze the soft serve for a firmer texture if you prefer.
