Parmesan Zucchini Chips Recipe

Ingredients

  • 2 medium zucchinis thinly sliced into rounds
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs panko for extra crispiness
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika optional
  • Salt and black pepper to taste
  • 1 large egg beaten
  • Cooking spray or olive oil spray

Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • Prepare the Breading Mixture: In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, paprika (if using), salt, and black pepper.
  • Coat the Zucchini Slices: In another shallow bowl, beat the egg. Dip each zucchini slice into the beaten egg, shaking off any excess. Then, coat the zucchini slice in the Parmesan breadcrumb mixture, pressing lightly to help the breading adhere.
  • Arrange on Baking Sheet: Place the coated zucchini slices in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray to help them crisp up in the oven.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until the zucchini chips are golden brown and crispy. Flip the zucchini halfway through the baking time for even crispness.
  • Serve: Remove the zucchini chips from the oven and serve them warm. They pair wonderfully with marinara sauce or ranch dressing for dipping.
