Ingredients:

For the Cake:
  • 1 box (15.25 ounces) white or yellow cake mix (plus ingredients listed on the box, typically eggs, water, and oil)
  • 1 box (3 ounces) strawberry-flavored gelatin (Jello)
  • 1 cup boiling water
  • 1/2 cup cold water
  • Ice cubes
For the Topping:
  • 1 package (8 ounces) whipped topping (such as Cool Whip), thawed
  • Fresh strawberries for garnish (optional)

Instructions:

  1. Prepare the Cake:
    • Preheat your oven according to the instructions on the cake mix box.
    • Prepare the cake batter according to the package instructions, using the eggs, water, and oil.
  2. Bake:
    • Bake the cake in a 9×13-inch baking pan according to the instructions on the cake mix box.
  3. Cool:
    • Allow the cake to cool for a few minutes after removing it from the oven.
  4. Prepare the Jello Mixture:
    • In a bowl, dissolve the strawberry Jello in 1 cup of boiling water.
    • Add 1/2 cup of cold water and stir until well combined.
    • Place the bowl in the refrigerator or set it over a bowl of ice water to cool the Jello mixture but do not let it set.
  5. Poke Holes in the Cake:
    • Use the end of a wooden spoon or another similar tool to poke holes evenly across the entire cake.
  6. Pour Jello Mixture Over the Cake:
    • Carefully pour the cooled (but not set) Jello mixture over the entire cake, making sure it fills the holes.
  7. Chill:
    • Place the cake in the refrigerator to allow the Jello to set and the cake to cool completely.
  8. Top with Whipped Topping:
    • Once the cake is completely cooled and the Jello is set, spread the whipped topping over the top of the cake.
  9. Garnish and Serve:
    • Optionally, garnish the cake with fresh sliced strawberries.
    • Slice and serve the Strawberry Jello Poke Cake chilled.

Notes:

  • Experiment with different flavors of Jello or use a mix of flavors for added variety.
  • You can also add fresh berries between the cake and whipped topping for extra fruity goodness.
  • Store any leftovers in the refrigerator.
