🧾 Ingredients:
1 small head green cabbage, chopped
1 large onion, diced
3 medium carrots, peeled and sliced
2 stalks celery, sliced
1 green bell pepper, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (no salt added)
6 cups low-sodium vegetable broth (or chicken broth)
1 tsp olive oil (optional)
1 tsp Italian seasoning
1/2 tsp paprika
Salt & pepper to taste
Optional: red pepper flakes or a splash of hot sauce for spice
🍳 Instructions:
Sauté (optional):
In a large soup pot, heat 1 tsp olive oil over medium heat. Add onions, garlic, celery, and carrots. Sauté for 5–7 minutes until softened.
Add everything else:
Stir in chopped cabbage, bell pepper, tomatoes, broth, and seasonings.
Simmer:
Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, or until veggies are tender.
Taste & adjust:
Add salt, pepper, and any extra seasoning to taste. Add red pepper flakes for heat, if desired.
