Ingredients:

  • 1 lb (450g) fresh asparagus, trimmed and cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup (240ml) low-fat milk
  • 2 tablespoons all-purpose flour
  • 1 cup (about 100g) shredded reduced-fat cheddar cheese
  • Salt and pepper to taste
  • Cooking spray

Topping:

  • 1/2 cup (about 50g) whole wheat breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon melted butter or olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
  2. Blanch Asparagus: Bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until slightly tender. Drain and immediately plunge the asparagus into ice water to stop the cooking process. Drain again and set aside.
  3. Prepare Sauce: In a saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened, about 2-3 minutes.
