Keto Boston Creme Chaffle cake

Ingredients:

  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 tsp baking powder
  • 2 tbsp cocoa powder
  • 1 tbsp coconut flour
  • 2 tbsp granulated erythritol
  • 1/2 tsp vanilla extract
  • 2 tbsp unsweetened almond milk
  • 2 tbsp heavy cream
  • 1/4 cup sugar-free chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup sugar-free vanilla pudding mix

Instructions:

  1. Preheat your mini waffle maker.
  2. In a mixing bowl, whisk the eggs until frothy.
  3. Add in the almond flour, baking powder, cocoa powder, coconut flour, erythritol, vanilla extract, almond milk, and heavy cream, and mix until well combined.
  4. Pour the batter into the mini waffle maker and cook until golden brown and cooked through, about 3-4 minutes.
  5. While the chaffles are cooking, prepare the chocolate ganache by melting the chocolate chips and heavy cream in a double boiler or in the microwave.
  6. Once the chaffles are cooked, spread a layer of vanilla pudding mix on top of one chaffle, then place another chaffle on top to make a sandwich.
  7. Drizzle the chocolate ganache on top of the chaffle sandwich.
  8. Enjoy!
