Instructions:

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups with oil.

In a large mixing bowl, whisk together the all-purpose flour, almond flour, rolled oats, sugar, baking powder, baking soda, and salt until well combined.

In another bowl, mix together the applesauce, vegetable oil, Greek yogurt, eggs, and vanilla extract until smooth and well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Gently fold in the rainbow sprinkles and any optional nuts or dried fruits until evenly distributed throughout the batter.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Top each muffin with additional rainbow sprinkles for decoration.

Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
