Ingredients:

1 cup self-raising flour

1/2 teaspoon baking powder

Pinch of salt

1/2 cup low-fat grated cheddar cheese

1/4 cup skim milk

1 tablespoon light butter or margarine, melted

1 egg, beaten
Instructions:

Preheat your oven to 200°C (about 400°F).

In a mixing bowl, sift together the self-raising flour, baking powder, and salt.

Stir in the grated cheddar cheese.

In a separate bowl, whisk together the skim milk, melted light butter or margarine, and beaten egg.

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.

Pat the dough down to about 2cm (about 3/4 inch) thickness.

Using a round cutter, cut out scones from the dough and place them onto a baking tray lined with parchment paper.

Lightly brush the tops of the scones with a little extra milk if desired.

Bake in the preheated oven for 10-12 minutes or until the scones are golden brown and cooked through.

Remove from the oven and allow to cool slightly before serving.
