  • 1 cup cherry tomatoes, halved (0 SmartPoints)
  • 1/2 cup sun-dried tomatoes (not in oil), chopped (adjust SmartPoints based on specific brand)
  • 1 cup baby spinach (0 SmartPoints)
  • 1/2 cup reduced-fat cream cheese (8 SmartPoints)
  • 1/2 cup fat-free half-and-half or skim milk (2 SmartPoints)
  • 1/4 cup grated Parmesan cheese (4 SmartPoints)
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish (optional)
  • Cooked whole-grain pasta or zucchini noodles (calories and SmartPoints vary)

  1. Cook the Shrimp:
    • In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
    • Add shrimp to the skillet and cook until pink and opaque. Remove shrimp from the skillet and set aside.
  2. Prepare the Sauce:
    • In the same skillet, add cherry tomatoes, sun-dried tomatoes, and baby spinach. Cook until the spinach wilts and the tomatoes soften.
    • Lower the heat and add cream cheese, fat-free half-and-half, and grated Parmesan cheese. Stir until the cheeses melt and the sauce thickens.
    • Season with salt, black pepper, and Italian seasoning.
  3. Combine with Shrimp:
    • Return the cooked shrimp to the skillet, coating them in the creamy Tuscan sauce. Cook for an additional 2-3 minutes to heat through.
  4. Serve:
    • Serve the creamy Tuscan shrimp over cooked whole-grain pasta or zucchini noodles.
    • Garnish with fresh basil if desired.
