Cottage Cheese Bread (1 point)

Ingredients:

  • 2 cups of fat free cottage cheese, strained
  • 1 1/2 cups old fashioned rolled oats
  • 4 large eggs
  • 1 tbsp baking powder
  • 1/4 tsp table salt

Directions:

  1. Preheat the oven to 350F. Prepare a 9″ x 5″ loaf pan by lightly spraying with oil or lining with parchment paper. Set aside.
  2. Add all the ingredients into a blender/food processor and blend/Food processor and blend/pulse until mostly smooth.
  3. Pour your batter into your prepared pan and bake 40-50 minutes (cover with foil if loaf gets too dark) or until a toothpick inserted into the center comes out clean.
  4. Alloe to set in the pan for 5 minutes, then transfer to a wire rack to cool for 10 minutes prior to slicing.
