Ingredients:

4 slices whole wheat bread

1/4 cup unsweetened almond milk (or any milk of your choice)

Salt and pepper to taste

1/4 cup reduced-fat shredded cheddar cheese

1/4 cup diced lean ham or turkey bacon

1/4 cup diced pickles

2 tablespoons light thousand island dressing (store-bought or homemade)
Instructions:

In a shallow dish, whisk together the eggs, almond milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

Dip each slice of bread into the egg mixture, ensuring both sides are coated evenly.

Heat a non-stick skillet over medium heat and spray with cooking spray.

Place the dipped bread slices onto the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.

Once the French toast slices are cooked, sprinkle the shredded cheddar cheese evenly over the top of each slice while they’re still hot, allowing the cheese to melt slightly.

Top two slices of the French toast with the diced ham or turkey bacon and diced pickles.

Spread the light thousand island dressing over the remaining two slices of French toast.

Sandwich the dressed slices with the slices topped with ham, bacon, and pickles, creating two Big Mac French toast sandwiches.
