HEALTHY TACO PIZZA

When I was in elementary school we had the BEST taco pizza. Anyone that went to the same school as me knows what I’m talking about.

It’s not too often that you hear about school food being one of the best things ever, but it really was. I’ve never had a taco pizza like it since.

My kids are in the same schools now, but they no longer serve the taco pizza. It makes me sad that I will never have that taco pizza again.

So instead I have to make my own taco pizza. And of course, I made it a healthy version.

This taco pizza isn’t quite like the one I used to have. I added refried beans, lettuce, sour cream and taco sauce. I also used a tortilla instead of pizza dough. That saved a ton of points!

I used one of the Xtreme high fiber tortillas, which is only 1 point. I cut it into 9 pieces, sprayed it with no-stick cooking spray and baked it in the oven for about 10 minutes. It’s more like a thin crust pizza.

While the tortilla was baking I started cooking the meat. I used 3 oz. of 95% lean ground beef. And yes, I used a food scale to weigh it. I think weighing your food is so important. I learned a lot about how off I was with portions of my food once I started weighing it.

I used fat-free refried beans as my “pizza sauce”. To make them easier to work with I put them in the microwave for 30 seconds and added a teaspoon of water to them. That made it much easier to spread on the tortilla.

Assembling the taco pizza is very easy. I started out by spreading the refried beans on the tortilla, then added the seasoned ground beef.

Then I added the lettuce, sour cream, taco sauce and reduced-fat Mexican cheese. That’s it!

If you eat the whole taco pizza it is only 6 Freestyle points. It’s definitely a filling meal!

Ingredients

  • 1 Ole Xtreme high fiber tortilla
  • 3 oz. 95% lean ground beef
  • 1 teaspoon taco seasoning
  • 1/4 cup fat-free refried beans
  • 2 tablespoons fat-free sour cream
  • 2 tablespoons reduced-fat Mexican cheese
  • Lettuce and taco sauce

Instructions

  1. Preheat oven to 350 degrees F.

  2. Cut the tortilla into 9 pieces. Spray both sides with no-stick cooking spray and add to a baking pan. Bake for 10 minutes, or until the tortilla is crispy.

  3. Brown the ground beef and drain any grease. Add the taco seasoning and cook according to the directions.

  4. Spread refried beans over the tortilla. Add the seasoned ground beef, sour cream, cheese, lettuce and taco sauce.
