Keto Chocolate No-Bake Eclair Cake Recipe:
Ingredients:
For the crust:
- 2 cups almond flour
- 1/4 cup granulated low-carb sweetener (such as erythritol or monk fruit)
- 1/2 cup melted butter
For the filling:
- 1 cup heavy whipping cream
- 1/2 cup unsweetened almond milk
- 1 package sugar-free instant vanilla pudding mix
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated low-carb sweetener
- 1 tsp vanilla extract
- 1/2 cup melted sugar-free chocolate chips
Instructions:
- In a mixing bowl, combine the almond flour, sweetener, and melted butter until it forms a crumbly mixture.
- Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
- In a large mixing bowl, beat the heavy whipping cream until it forms stiff peaks.
- In a separate mixing bowl, whisk together the almond milk, vanilla pudding mix, cocoa powder, sweetener, and vanilla extract until smooth.
- Fold the whipped cream into the pudding mixture until well combined.
- Pour the filling onto the crust and spread it evenly.
- Melt the sugar-free chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted.
- Drizzle the melted chocolate over the top of the filling.
- Chill the cake in the refrigerator for at least 2 hours or until set.
- Slice and serve chilled.
