Keto Chocolate No-Bake Eclair Cake Recipe:

Ingredients:

For the crust:

  • 2 cups almond flour
  • 1/4 cup granulated low-carb sweetener (such as erythritol or monk fruit)
  • 1/2 cup melted butter

For the filling:

  • 1 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1 package sugar-free instant vanilla pudding mix
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated low-carb sweetener
  • 1 tsp vanilla extract
  • 1/2 cup melted sugar-free chocolate chips

Instructions:

  1. In a mixing bowl, combine the almond flour, sweetener, and melted butter until it forms a crumbly mixture.
  2. Press the mixture into the bottom of a 9×13 inch baking dish to form the crust.
  3. In a large mixing bowl, beat the heavy whipping cream until it forms stiff peaks.
  4. In a separate mixing bowl, whisk together the almond milk, vanilla pudding mix, cocoa powder, sweetener, and vanilla extract until smooth.
  5. Fold the whipped cream into the pudding mixture until well combined.
  6. Pour the filling onto the crust and spread it evenly.
  7. Melt the sugar-free chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted.
  8. Drizzle the melted chocolate over the top of the filling.
  9. Chill the cake in the refrigerator for at least 2 hours or until set.
  10. Slice and serve chilled.
