This keto/low carb unstuffed cabbage roll soup is a great alternative that gives you all the delicious flavors of the classic dish in a much simpler and easier-to-make recipe. You can cook it in either an Instant Pot or a Crock Pot, depending on your preference. The ingredients are all low in carbs and high in healthy fats, making it a perfect option for those following a keto or low-carb diet.

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 head cabbage, chopped
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 4 cups beef broth
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Instant Pot, brown the ground beef over medium-high heat. Remove it from the pot and set it aside.
  2. Add the chopped onion and garlic to the same pot and sauté until softened.
  3. Add the chopped cabbage to the pot and stir well to combine with the onions and garlic.
  4. Pour in the diced tomatoes, tomato sauce, and beef broth.
  5. Add the paprika, thyme, and oregano, as well as salt and pepper to taste.
  6. Stir well to combine all the ingredients.
  7. If using an Instant Pot, close the lid and press the “Soup” button. Cook for 30 minutes and then release the pressure manually. If using a Crock Pot, cook on high for 4-5 hours or on low for 6-8 hours.
  8. Once the soup is done, give it a stir and taste for seasoning. Adjust if needed.
  9. Ladle the soup into bowls and serve hot.
