Low-Point Cheesy Chicken Fritters

Ingredients:

  • 1 lb ground chicken breast
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
  2. Mix Ingredients:
    • In a large mixing bowl, combine ground chicken breast, reduced-fat shredded cheddar cheese, grated Parmesan cheese, plain breadcrumbs, chopped fresh parsley, finely chopped onion, egg, minced garlic, paprika, salt, and black pepper. Mix until all ingredients are well combined.
  3. Form Fritters:
    • Take about 2 tablespoons of the chicken mixture and form it into a small patty or ball. Place it on the prepared baking sheet. Repeat with the remaining mixture, spacing the fritters evenly on the baking sheet.
  4. Bake:
    • Lightly coat the tops of the fritters with cooking spray. Bake in the preheated oven for 12-15 minutes, or until the fritters are cooked through and golden brown on the outside.
  5. Serve:
    • Once cooked, remove the cheesy chicken fritters from the oven and let them cool for a few minutes. Serve hot as a delicious appetizer or main dish. Enjoy!
