Mashed Potato Cakes

Ingredients:

  • 2 cups mashed potatoes (prepared without added fats like butter or cream)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup whole wheat breadcrumbs
  • 2 green onions, finely chopped
  • 1 large egg, beaten
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. In a mixing bowl, combine the mashed potatoes, Parmesan cheese, breadcrumbs, chopped green onions, beaten egg, salt, and pepper. Mix well until all ingredients are evenly combined.
  2. Divide the potato mixture into equal portions and shape each portion into a small cake or patty. You can adjust the size depending on your preference, but aim for uniformity so they cook evenly.
  3. Preheat a non-stick skillet over medium heat and lightly coat it with cooking spray.
  4. Once the skillet is hot, place the potato cakes in the skillet, being careful not to overcrowd them. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Remove the potato cakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
  6. Serve the mashed potato cakes warm as a delicious side dish or a light meal option. You can also garnish with additional chopped green onions or a dollop of Greek yogurt if desired.
