Oat Groat & Orange Salad (3 points)


  • 26g uncooked oat groats
  • 1/4 cup cucumber, chopped
  • 9g sliced almonds, toasted
  • 1/4 medium lemon, juice and zest
  • 1 medium orange, segments


  1. Place the oat groats in a saucepan and add 2 1/2 cups water. Bring to a boil, lower the heat and simmer for 60 minutes. Drain and cool.
  2. Toss the oat groats with the rest of the ingredients.
