“This Skinny Cobb Salad has some of my favorite ingredients: grilled chicken, crispy bacon, hard boiled eggs, cheese and avocado.

Ingredients
- 1 1/2 cups lettuce ( Iceberg, Spring Mix, Romaine )
- 2 slices bacon, diced ( equivalent to 2 points for 2 slices of center cut, turkey bacon, chicken bacon or or Hormel precooked bacon) I use Sam’s club Hormel precooked bacon
- 2 hard boiled eggs, diced
- 1/4 cup cheese (light pepper jack, mozzarella, Monterey, blue cheese, Roquefort cheese, or light cheddar) I use Trader Joe’s lite 3 cheese blend
- 1 cup grilled or rotisserie chicken, diced
- 1 oz. avocado, diced
- 2 Tbsp croutons, optional topping ( I use New York Texas Toast Croutons)
- 2 Tbsp dressing of your choice ( I use my Easy Skinny Ranch Dressing)

- Place the lettuce in a large bowl arrange, chicken, bacon, hard boiled eggs, tomatoes, avocado slices, and cheese in sections over the lettuce.
- Season with salt and pepper, to taste
- Drizzle dressing over the salad and serve immediately.
