Skinny Cobb Salad Recipe

“This Skinny Cobb Salad has some of my favorite ingredients: grilled chicken, crispy bacon, hard boiled eggs, cheese and avocado.

  • 1 1/2 cups lettuce ( Iceberg, Spring Mix, Romaine )
  • 2 slices bacon, diced  ( equivalent to 2 points for 2 slices of center cut, turkey bacon, chicken bacon or or Hormel precooked bacon) I use Sam’s club Hormel precooked bacon
  • 2 hard boiled eggs, diced
  • 1/4 cup cheese (light pepper jack, mozzarella, Monterey, blue cheese, Roquefort cheese, or light cheddar) I use Trader Joe’s lite 3 cheese blend
  • 1 cup grilled or rotisserie chicken, diced
  • 1 oz. avocado, diced
  • 2 Tbsp croutons, optional topping ( I use New York Texas Toast Croutons)
  • 2 Tbsp dressing of your choice ( I use my Easy Skinny Ranch Dressing)


      1. Place the lettuce in a large bowl arrange, chicken, bacon, hard boiled eggs, tomatoes, avocado slices, and cheese in sections over the lettuce.
      2. Season with salt and pepper, to taste
      3. Drizzle dressing over the salad and serve immediately.
