Ingredients:
- 1 head of cauliflower, grated or riced
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 cup peas
- 2 large eggs, beaten
- 2 tbsp soy sauce or tamari
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
- Add the diced bell pepper and peas and sauté for another 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Add the grated cauliflower rice to the skillet and stir to combine with the vegetables and eggs.
