Keto Cauliflower Fried Rice

Ingredients:

  • 1 head of cauliflower, grated or riced
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup peas
  • 2 large eggs, beaten
  • 2 tbsp soy sauce or tamari
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and sauté for 2-3 minutes until the onion is translucent.
  3. Add the diced bell pepper and peas and sauté for another 2-3 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  5. Add the grated cauliflower rice to the skillet and stir to combine with the vegetables and eggs.
  6. Add the soy sauce or tamari to the skillet and stir to coat the cauliflower rice mixture.
  7. Season with salt and pepper to taste.
  8. Cook for an additional 3-5 minutes until the cauliflower rice is tender and heated through.
  9. Serve hot, garnished with chopped green onions.
