Oven-Fried Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cornflake crumbs (you can use whole grain cornflakes for added health benefits)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup skim milk
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly coat a baking sheet with cooking spray.
  2. In a shallow dish, combine the cornflake crumbs, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Pour the skim milk into another shallow dish.
  4. Dip each chicken breast into the milk, then dredge it in the cornflake mixture, pressing gently to adhere the crumbs to the chicken.
  5. Place the coated chicken breasts on the prepared baking sheet.
  6. Lightly spray the tops of the chicken breasts with cooking spray. This will help them crisp up in the oven.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
  8. Serve hot with your favorite sides like steamed vegetables, brown rice, or a salad.
