Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cornflake crumbs (you can use whole grain cornflakes for added health benefits)
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup skim milk
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C). Lightly coat a baking sheet with cooking spray.
- In a shallow dish, combine the cornflake crumbs, paprika, garlic powder, onion powder, salt, and black pepper.
- Pour the skim milk into another shallow dish.
- Dip each chicken breast into the milk, then dredge it in the cornflake mixture, pressing gently to adhere the crumbs to the chicken.
- Place the coated chicken breasts on the prepared baking sheet.
- Lightly spray the tops of the chicken breasts with cooking spray. This will help them crisp up in the oven.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
- Serve hot with your favorite sides like steamed vegetables, brown rice, or a salad.
